Easy Delicious Breakfast Cookies (Sugar-Free, Dairy-Free, Gluten-Free)

 

What You'll Need

 

  • 1 medium banana
  • 2 cups old fashioned rolled oats
  • 1/2 cup mixed seeds and nuts of choice
  • 1/2 cup peanut butter, slightly melted
  • 3 tablespoons honey
  • 1 teaspoon cinnamon
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup raisins or dried fruit of choice

 

How to Make It

 

1. Toast the Coconut:

  • In a nonstick skillet over medium-low heat, spread the coconut flakes in a single layer.
  • Toast while stirring constantly until lightly golden brown, about 3–4 minutes.

 

2. Prep the Dough:

  • Preheat oven to 375°F (190°C).
  • In a large bowl, mash the banana.
  • Add melted peanut butter and honey to the banana and stir well to combine.
  • Add oats, seeds, nuts, raisins, cinnamon, and a pinch of salt (if using). Stir until fully combined.

 

3. Shape & Bake:

  • Using a cookie or ice cream scoop, portion out the dough onto an ungreased cookie sheet, spacing cookies about 1 inch apart.
  • Use the back of a spoon to gently flatten each cookie.
  • Top each cookie with toasted coconut.
  • Bake for 10–12 minutes or until the tops are slightly golden brown.

 

Final Touch

  • Let cookies cool completely on the baking tray before removing they will crumble if handled while still warm.

I believe Pam is saying that there is no sugar added as an ingredient, not that there is no sugar/sweetness in the breakfast bars.
