Easy Delicious Breakfast Cookies (Sugar-Free, Dairy-Free, Gluten-Free)
What You'll Need
- 1 medium banana
- 2 cups old fashioned rolled oats
- 1/2 cup mixed seeds and nuts of choice
- 1/2 cup peanut butter, slightly melted
- 3 tablespoons honey
- 1 teaspoon cinnamon
- 1/2 cup unsweetened coconut flakes
- 1/2 cup raisins or dried fruit of choice
How to Make It
1. Toast the Coconut:
- In a nonstick skillet over medium-low heat, spread the coconut flakes in a single layer.
- Toast while stirring constantly until lightly golden brown, about 3–4 minutes.
2. Prep the Dough:
- Preheat oven to 375°F (190°C).
- In a large bowl, mash the banana.
- Add melted peanut butter and honey to the banana and stir well to combine.
- Add oats, seeds, nuts, raisins, cinnamon, and a pinch of salt (if using). Stir until fully combined.
3. Shape & Bake:
- Using a cookie or ice cream scoop, portion out the dough onto an ungreased cookie sheet, spacing cookies about 1 inch apart.
- Use the back of a spoon to gently flatten each cookie.
- Top each cookie with toasted coconut.
- Bake for 10–12 minutes or until the tops are slightly golden brown.
Final Touch
- Let cookies cool completely on the baking tray before removing they will crumble if handled while still warm.

I believe Pam is saying that there is no sugar added as an ingredient, not that there is no sugar/sweetness in the breakfast bars.
Bananas, peanut butter, and honey all have sugar and a fairly decent amount
