What You'll Need
- 3–4 pounds sweet potatoes
- 1 cup brown sugar
- 1 tablespoon cinnamon
- 1/2 teaspoon cloves
- 1/2 teaspoon ground ginger
- 3 tablespoons all purpose flour
- 2 large eggs
- 1/4 cup softened butter
- 1/2 cup heavy cream

How to Make It
1. Prepare the Sweet Potatoes:
- Peel and cut sweet potatoes into chunks.

2. Blend the Filling:
- Preheat oven to 350 degrees fahrenheit.
- Using an electric mixer, blend the cooked sweet potatoes until smooth.

3. Bake the Pie:
- Pour the mixture into a cold pie shell.
- Cover the pie crust edges with foil to prevent burning.
- Bake for 55 to 60 minutes, or until the center is slightly jiggly and a toothpick inserted in the middle comes out slightly moist.
4. Cool and Serve:

Notes:
- When blending the sweet potatoes, rinse the beaters several times to remove the strings from the potatoes.
- Do not overbake. The pie will continue to set as it cools.
