What You'll Need

 

  • 3–4 pounds sweet potatoes
  • 1 cup brown sugar
  • 1 tablespoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon ground ginger
  • 3 tablespoons all purpose flour
  • 2 large eggs
  • 1/4 cup softened butter
  • 1/2 cup heavy cream
  • 2 tablespoons vanilla extract

 

How to Make It

 

1. Prepare the Sweet Potatoes:

  • Peel and cut sweet potatoes into chunks.
  • Boil until fork tender, then drain well.

 

2. Blend the Filling:

  • Preheat oven to 350 degrees fahrenheit.
  • Using an electric mixer, blend the cooked sweet potatoes until smooth.
  • Add all remaining ingredients and mix until fully combined and creamy, scraping down the sides of the bowl several times while mixing.

 

3. Bake the Pie:

  • Pour the mixture into a cold pie shell.
  • Cover the pie crust edges with foil to prevent burning.
  • Bake for 55 to 60 minutes, or until the center is slightly jiggly and a toothpick inserted in the middle comes out slightly moist.

 

4. Cool and Serve:

Notes:

  • When blending the sweet potatoes, rinse the beaters several times to remove the strings from the potatoes.
  • Do not overbake. The pie will continue to set as it cools.
