Roasted Purple Cabbage Stir Fry

 

What You'll Need

 

  • 1 small purple cabbage, cut into wedges
  • 1 large sweet potato, peeled and cut into small chunks
  • 1/2 onion, sliced
  • 14 ounces smoked sausage, thinly sliced
  • 3 tablespoons Pam’s Prep Seasoning
  • 2 tablespoons olive oil
  • Large rimmed sheet tray 

 

How to Make It

 

1. Prep the Oven and Pan:

  • Preheat oven to 375 degrees fahrenheit.


2. Layer the Ingredients:

  • Arrange ingredients on the sheet tray in this order: sweet potatoes, smoked sausage, onions, then cabbage on top.
  • Drizzle generously with olive oil.
  • Season evenly with Pam’s Prep Seasoning.


3. Roast:

  • Place tray in the preheated oven.
  • Roast for 30 minutes or until potatoes are tender, sausage is browned, and cabbage edges begin to char.


4. Serve:

  • Remove from oven and serve warm. ENJOY!

 

Note: Use a very thin rimmed sheet tray. A standard baking dish with tall sides can cause the ingredients to steam and become soggy.
