Easy Ramen Egg Stir-Fry

 

What You'll Need

 

  • 1 package ramen noodles (flavor of choice)
  • 2 tablespoons fresh parsley, chopped and divided (or to taste)
  • 1/2 onion, chopped
  • 2 large eggs
  • 1–2 tablespoons ghee (or cooking oil of choice)

 

How to Make It

 

1. Cook the Ramen:

  • In a medium pot, bring 2 cups of water to a boil.
  • Add the ramen noodles and cook for 2–4 minutes, or until your preferred doneness.
  • Drain the noodles, stir in the seasoning packet, and set aside.

 

2. Sauté the Onion:

  • Heat ghee or oil in a skillet over medium heat.
  • Add chopped onion and sauté for 1–2 minutes until fragrant and translucent.

 

3. Combine & Stir-Fry:

  • Add the drained noodles and half the parsley to the skillet.
  • Cook for about 2 more minutes, stirring occasionally.

 

4. Add the Eggs:

  • Whisk the eggs in a small bowl and pour into the skillet with the noodles.
  • Cook until the eggs are set and completely cooked through.

 

Final Touch

  • Garnish with remaining parsley and serve warm. ENJOY!
