What You'll Need


Main Ingredients:

  • 2 pounds ground beef, ground turkey, or chicken
  • 1/4 cup green bell peppers, chopped
  • 1/4 cup red bell peppers, chopped
  • 1 small onion, diced
  • 15-ounce can diced tomatoes
  • 2 tablespoons tomato paste
  • 4 cups beef broth


Spices & Seasonings
:

  • 1/4 cup chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon cumin
  • 2 tablespoons 100% unsweetened cocoa powder
  • 2 tablespoons Pam's Prep All-Purpose Seasoning

Thickener:

  • 1/4 cup mesa flour
  • 1/2 cup cold water

 

Optional Garnishes:

  • Cheddar cheese
  • Sour cream
  • Green onions

 

How to make it

Step-by-Step Instructions:

 

Cook the Protein:

  • In a large heavy-bottom pot or Dutch oven, brown the ground beef (or chosen protein) over medium heat.
  • Drain excess fat and return to the pot

 

Sauté the Vegetables:

  • Add green bell peppers, red bell peppers, and diced onion to the pot.
  • Cook until the onions are translucent and the peppers have softened.


Add Spices & Cocoa:

  • Stir in chili powder, garlic powder, onion powder, cumin, Pam's Prep seasoning, and cocoa powder.
  • Mix thoroughly to coat the beef and vegetables.


Add Liquids & Tomatoes:

  • Stir in the diced tomatoes, tomato paste, and beef broth.
  • Bring the mixture to a slight boil, then reduce to a simmer.

 

Simmer & Thicken:

  • Let the chili simmer uncovered for about 20 minutes until it starts to thicken.
  • In a small bowl, mix mesa flour with cold water until pourable.
  • Gradually pour the mixture into the chili while stirring constantly.

 

Final Touch:

  • Bring the chili back to a slight boil, then reduce to a simmer.
  • Cook for another 5 minutes, or until the chili reaches your desired consistency.

Top your chili with:

  • Shredded cheddar cheese
  • A dollop of sour cream
  • Chopped green onions
