What You'll Need
Main Ingredients:
- 2 pounds ground beef, ground turkey, or chicken
- 1/4 cup green bell peppers, chopped
- 1/4 cup red bell peppers, chopped
- 1 small onion, diced
- 15-ounce can diced tomatoes
- 2 tablespoons tomato paste
- 4 cups beef broth
Spices & Seasonings:
- 1/4 cup chili powder
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon cumin
- 2 tablespoons 100% unsweetened cocoa powder
- 2 tablespoons Pam's Prep All-Purpose Seasoning

Thickener:
- 1/4 cup mesa flour
- 1/2 cup cold water
Optional Garnishes:
- Cheddar cheese
- Sour cream
- Green onions
How to make it
Step-by-Step Instructions:
Cook the Protein:
- In a large heavy-bottom pot or Dutch oven, brown the ground beef (or chosen protein) over medium heat.
- Drain excess fat and return to the pot
Sauté the Vegetables:
- Add green bell peppers, red bell peppers, and diced onion to the pot.
- Cook until the onions are translucent and the peppers have softened.
Add Spices & Cocoa:
- Stir in chili powder, garlic powder, onion powder, cumin, Pam's Prep seasoning, and cocoa powder.
- Mix thoroughly to coat the beef and vegetables.
Add Liquids & Tomatoes:
- Stir in the diced tomatoes, tomato paste, and beef broth.
- Bring the mixture to a slight boil, then reduce to a simmer.
Simmer & Thicken:
- Let the chili simmer uncovered for about 20 minutes until it starts to thicken.
- In a small bowl, mix mesa flour with cold water until pourable.
- Gradually pour the mixture into the chili while stirring constantly.
Final Touch:
- Bring the chili back to a slight boil, then reduce to a simmer.
- Cook for another 5 minutes, or until the chili reaches your desired consistency.
Serving Suggestions
Top your chili with:
- Shredded cheddar cheese
- A dollop of sour cream
- Chopped green onions
Serve with:
