Hearty Cabbage & Basmati Rice Skillet
What You'll Need
- 1 small purple cabbage, chopped
- 1/2 small radicchio, chopped
- 1 small bunch green onions, chopped
- 2 tablespoons Pam's Prep All Purpose Seasoning
- 1/2 yellow onion, chopped
- 3–4 cloves garlic, chopped
- 2 cups chicken broth
- 3/4 cup basmati rice
- 2–3 tablespoons cooking oil (Macadamia Nut Oil recommended)
How to Make It
1. Start the Base:
- In a large pot or skillet, heat the cooking oil over medium heat.
- Sauté chopped garlic and yellow onion for 1–2 minutes until fragrant and softened.
2. Cook the Cabbage:
- Add chopped purple cabbage to the skillet and stir to coat in the oil.
- Cook for several minutes until the cabbage starts to soften.
3. Add Rice & Radicchio:
- Add basmati rice and stir to coat well, cooking for 2 minutes while stirring constantly.
- Stir in chopped radicchio and combine everything evenly.
4. Simmer:
- Pour in the chicken broth and bring the mixture to a simmer.
- Reduce heat to low, cover, and cook until rice is tender and the liquid is fully absorbed.
Final Touch
- Remove from heat and stir in green onions, reserving a handful for garnish.
- Serve warm and enjoy this flavorful and hearty dish!
