How To Make Pie Crust At Home
What You'll Need
- 2 1/2 cups all-purpose flour
- 3–5 tablespoons ice water
- 1/2 tablespoon sugar
- 8 tablespoons very cold salted butter
- 8 tablespoons very cold shortening
- 1/2 teaspoon salt (only if using unsalted butter)
- Plastic wrap
How to Make It
1. Combine the Dry Ingredients:
- Add flour, sugar, and salt (if using) to a food processor.
- Pulse 1–2 times just to incorporate.
2. Add the Butter & Shortening:
- Add cold butter and shortening to the food processor.
- Pulse until the mixture is crumbly and resembles coarse sand.
3. Add the Water:
- With the food processor running on low, slowly add ice water 1 tablespoon at a time.
- Stop as soon as the dough sticks together when pressed between your fingers.
4. Shape & Chill:
- Turn the dough out onto a lightly floured surface and press together (do not knead).
- Divide into two equal pieces and form into discs.
- Wrap each disc in plastic wrap and refrigerate for at least 30 minutes before using.
Note: For best results, chill all ingredients, even the flour, utensils, and food processor blade, before making the dough. Cold ingredients are the key to a perfectly flaky crust
