How To Make Pie Crust At Home

What You'll Need

  • 2 1/2 cups all-purpose flour
  • 3–5 tablespoons ice water
  • 1/2 tablespoon sugar
  • 8 tablespoons very cold salted butter
  • 8 tablespoons very cold shortening
  • 1/2 teaspoon salt (only if using unsalted butter)
  • Plastic wrap

How to Make It

1. Combine the Dry Ingredients:

  • Add flour, sugar, and salt (if using) to a food processor.
  • Pulse 1–2 times just to incorporate.

2. Add the Butter & Shortening:

  • Add cold butter and shortening to the food processor.
  • Pulse until the mixture is crumbly and resembles coarse sand.

3. Add the Water:

  • With the food processor running on low, slowly add ice water 1 tablespoon at a time.
  • Stop as soon as the dough sticks together when pressed between your fingers.

4. Shape & Chill:

  • Turn the dough out onto a lightly floured surface and press together (do not knead).
  • Divide into two equal pieces and form into discs.
  • Wrap each disc in plastic wrap and refrigerate for at least 30 minutes before using.

Note: For best results, chill all ingredients, even the flour, utensils, and food processor blade, before making the dough. Cold ingredients are the key to a perfectly flaky crust
