No Flour, No Yeast, No Oven! 3-Minute Dinner Bun
If you’re looking for a quick, high-protein bread alternative that requires zero oven heat, no yeast, and no traditional wheat flour, this 3-Minute Dinner Bun is about to become your new kitchen staple! Whether you buy store-bought chickpea flour or blend your own whole dried chickpeas right from the pantry, this recipe turns out amazingly soft, fluffy, and completely egg-free using simple Greek yogurt. It’s perfect for a quick sandwich, a warm dinner side, or whenever you need bread in a pinch!
Ingredients
For Homemade Chickpea Flour (Optional):
- Whole dried chickpeas (garbanzo beans)
For the 3-Minute Dinner Bun:
- 3 tablespoons chickpea flour (store-bought or freshly ground)
- 2 tablespoons plain Greek yogurt
- 1 teaspoon baking powder
- 2 tablespoons butter, divided (1 tablespoon melted for the batter and 1 tablespoon for greasing the ramekin)
- 1 teaspoon Pam’s Prep All-Purpose Classic Seasoning
- Water, added 1 teaspoon at a time if needed for consistency
Instructions
1. Make the Chickpea Flour (Optional)
If making your own chickpea flour from scratch, place whole dried chickpeas into a high-speed blender. Blend for 1–2 minutes until finely ground, then sift the flour to remove any large, coarse pieces. Set aside 3 tablespoons for the dinner bun.
2. Prepare the Ramekin
Use 1 tablespoon of butter to thoroughly grease the inside of a microwave-safe ramekin or small bowl. Make sure to coat the bottom and sides so your bun releases easily after cooking.
3. Mix the Batter
In a small mixing bowl, combine the chickpea flour, plain Greek yogurt, baking powder, remaining 1 tablespoon of melted butter, and Pam’s Prep All-Purpose Classic Seasoning.
Stir everything together until fully combined. If the batter is too thick, add water 1 teaspoon at a time, mixing after each addition, until you achieve a smooth, spoonable consistency.
4. Fill & Microwave
Transfer the prepared batter into your greased ramekin and smooth the top with a spoon or spatula. Place in the microwave and cook on HIGH for approximately 90 seconds, or until the bun is set and firm in the center. Microwave cooking times may vary depending on the power of your microwave.
5. Cool & Serve
Carefully remove the ramekin from the microwave, as it may be hot. Gently invert it onto a plate to release the bun. Allow it to cool slightly before slicing.
Serve warm as a dinner side, slice it for a quick sandwich, or enjoy it with your favorite toppings. ENJOY!
Pam’s Pro Tip:
Save Those Chickpea Pieces! Don't throw away any coarse chickpea pieces left in your sieve when making flour from scratch. Save them in a jar to add to soups, stews, or broths as a natural thickener!
Make It Extra Crispy! Once your bun comes out of the ramekin, slice it in half and toast it in a hot skillet with a touch more butter for an extra golden, crispy crust.
