MCT Oil Summer Citrus Cooler
A refreshing, brain-boosting summer drink with smooth MCT oil blended into a tropical citrus base.
Ingredients
- 2 tablespoons MCT oil
- 3 tablespoons fresh lime juice
- 1/2 tablespoon fresh orange zest
- 1 1/2 cups coconut water
- 1/2 cup cold water
- 1 tablespoon raw honey or agave
- 1/2 teaspoon fresh ginger, grated
- 1/2 cup ice cubes or frozen fruit, such as peaches, pineapples, or berries
- 6 fresh mint leaves and lime wheels, for garnish
Instructions
1. Blend the Base
Add the coconut water, cold water, fresh lime juice, orange zest, raw honey or agave, and grated ginger to your blender. Blend on medium until completely combined.
2. Emulsify the MCT Oil
Turn the blender to high. Slowly drizzle in the MCT oil while it is running. Blending on high speed emulsifies the oil into the citrus mixture so it stays perfectly smooth instead of leaving an oily film on top. Blend for 30 seconds.
3. Ice & Froth
Drop the ice cubes or frozen fruit into the blender and blend again on high for 20 seconds, until the cooler is beautifully slushy, frothy, and ice-cold.
4. Garnish & Serve
Pour into tall glasses. Garnish with fresh mint leaves and a crisp lime wheel. Serve immediately while it is at peak texture!
Chef's Tips & Notes:
Start Slow: If you are new to MCT oil, start with 1 teaspoon and work your way up over a few days. Adding too much too quickly can cause digestive upset.
Make it a Tropical Slushie: Toss in a handful of frozen mango, peaches, or pineapple chunks before blending.
Electrolyte Boost: Add a tiny pinch of clean sea salt and a dash of cayenne pepper for a perfect post-workout recovery kick.
