Bright and Zesty Lemon Loaf Cake

 

What You'll Need

 

Lemon Cake Ingredients:

  • 1/2 cup butter, room temperature
  • 1 cup white sugar
  • 3 large eggs, room temperature
  • 4 tablespoons lemon zest
  • 2 tablespoons lemon juice
  • 2 teaspoons vanilla
  • 1 1/2 cups all purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 cup plus 2 tablespoons sour cream

 

Lemon Glaze:

  • 1 cup powdered sugar
  • 4 tablespoons lemon juice (more or less for desired consistency)
  • 1 teaspoon lemon zest

 

How to Make It

 

1. Prep the Pan:

  • Preheat oven to 325 degrees fahrenheit.
  • Prepare loaf pan as shown in the video.

 

2. Make the Cake Batter:

  • Cream the butter and sugar together for 3 to 4 minutes.
  • Add the eggs one at a time, mixing well after each addition.
  • Add lemon zest, lemon juice and vanilla, mix well.
  • In a separate bowl whisk flour, salt, baking powder and baking soda.
  • Add the flour mixture to the butter mixture alternating with sour cream, beginning and ending with flour.

 

3. Bake:

  • Pour batter into prepared loaf pan.
  • Bake until done (see video for timing and doneness cues).
  • Cool in the pan until about halfway cooled.

 

4. Make the Glaze:

  • Mix powdered sugar, lemon juice and lemon zest until smooth and slightly runny.

 

5. Glaze the Cake:

  • Pour glaze over the warm cake.
  • Let the cake cool completely before slicing.
