Bright and Zesty Lemon Loaf Cake
What You'll Need
Lemon Cake Ingredients:
- 1/2 cup butter, room temperature
- 1 cup white sugar
- 3 large eggs, room temperature
- 4 tablespoons lemon zest
- 2 tablespoons lemon juice
- 2 teaspoons vanilla
- 1 1/2 cups all purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 cup plus 2 tablespoons sour cream
Lemon Glaze:
- 1 cup powdered sugar
- 4 tablespoons lemon juice (more or less for desired consistency)
- 1 teaspoon lemon zest
How to Make It
1. Prep the Pan:
- Preheat oven to 325 degrees fahrenheit.
- Prepare loaf pan as shown in the video.
2. Make the Cake Batter:
- Cream the butter and sugar together for 3 to 4 minutes.
- Add the eggs one at a time, mixing well after each addition.
- Add lemon zest, lemon juice and vanilla, mix well.
- In a separate bowl whisk flour, salt, baking powder and baking soda.
- Add the flour mixture to the butter mixture alternating with sour cream, beginning and ending with flour.
3. Bake:
- Pour batter into prepared loaf pan.
- Bake until done (see video for timing and doneness cues).
- Cool in the pan until about halfway cooled.
4. Make the Glaze:
- Mix powdered sugar, lemon juice and lemon zest until smooth and slightly runny.
5. Glaze the Cake:
- Pour glaze over the warm cake.
- Let the cake cool completely before slicing.
