What You'll Need

  • 2 pounds ground chicken
  • 2 tablespoons Pam's Prep All Purpose Seasoning
  • 2 teaspoons salt
  • 1/8 teaspoon cinnamon
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 tablespoon liquid smoke
  • 2 teaspoons rubbed sage
  • 1 teaspoon dried thyme
  • 1 tablespoon red pepper flakes
  • 1/4 cup maple syrup
  • 4 tablespoons beef tallow, divided

 

How to Make It

 

1. Mix the Sausage

  • In a large bowl, combine ground chicken, Pam's Prep All Purpose Seasoning, salt, cinnamon, garlic powder, onion powder, liquid smoke, sage, thyme, red pepper flakes, maple syrup, and 2 tablespoons beef tallow.
  • Using gloves, mix everything by hand until well blended and smooth. The mixture will be very sticky. Set aside.

 

2. Form and Cook the Patties

  • In a large skillet, heat 1 tablespoon beef tallow over medium-low heat.
  • Remove gloves and wet your hands. Form the sausage mixture into patties and place them immediately into the skillet.
  • Keep your hands wet as you form each patty to prevent sticking.
  • Cook the patties for about 5 minutes, or until golden brown on one side.
  • Flip and continue to cook until fully cooked through or an internal temperature of 165°F is reached.
  • Remove the patties to a plate and repeat until all the mixture has been used.

 

3. Storing Tips

  • Form patties and place on parchment paper. Freeze until solid, then transfer to an airtight container.
  • Patties can be frozen for up to 3 months.
  • Cooked or uncooked patties can be stored in the refrigerator for up to 5 days.
