In a large bowl, combine ground chicken, Pam's Prep All Purpose Seasoning, salt, cinnamon, garlic powder, onion powder, liquid smoke, sage, thyme, red pepper flakes, maple syrup, and 2 tablespoons beef tallow.
Using gloves, mix everything by hand until well blended and smooth. The mixture will be very sticky. Set aside.
2. Form and Cook the Patties
In a large skillet, heat 1 tablespoon beef tallow over medium-low heat.
Remove gloves and wet your hands. Form the sausage mixture into patties and place them immediately into the skillet.
Keep your hands wet as you form each patty to prevent sticking.
Cook the patties for about 5 minutes, or until golden brown on one side.
Flip and continue to cook until fully cooked through or an internal temperature of 165°F is reached.
Remove the patties to a plate and repeat until all the mixture has been used.
3. Storing Tips
Form patties and place on parchment paper. Freeze until solid, then transfer to an airtight container.
Patties can be frozen for up to 3 months.
Cooked or uncooked patties can be stored in the refrigerator for up to 5 days.
