Homemade Blue Zone Corn Tortillas

There is nothing quite like the smell and taste of a freshly made, warm corn tortilla. Inspired by traditional Blue Zone cooking practices where simple, wholesome pantry staples nourish body and soul, these soft corn tortillas are as satisfying to make as they are to eat. Using just Masa Harina, warm water, and a pinch of salt, you get tender, pliable street-taco sized tortillas perfect for any meal. It is proof that simple pantry ingredients made right in your own kitchen can deliver incredible flavor.

Ingredients

  • 2 cups Masa Harina (Masa corn flour)
  • 1/4 teaspoon fine salt
  • 1/4 teaspoon baking soda
  • 1 1/2 cups warm water (plus 1–2 tablespoons as needed)

 

Equipment Needed

  • Large mixing bowl
  • Parchment paper or plastic wrap
  • Tortilla press (or a heavy flat cutting board/skillet)
  • Heavy skillet or cast-iron pan

Instructions

1. Mix the Dough

In a large bowl, whisk together the Masa Harina, baking soda, and salt. Pour in the warm water and mix with your hands until a soft dough begins to form.

 

2. Knead & Rest

Knead the dough inside the bowl for about 2 minutes until completely smooth. The texture should feel like soft playdough. If the dough feels crumbly, add warm water 1 tablespoon at a time. If it is too sticky, sprinkle in a little more Masa Harina. Cover the bowl with a damp towel and let the dough rest for 10 minutes.

 

3. Divide into Portions

Divide the dough into 12 equal small portions and roll each portion into a smooth ball, about the size of a golf ball.

 

4. Press the Tortillas

Place one dough ball between two sheets of plastic wrap or parchment paper. Press firmly with a tortilla press or a heavy flat skillet to flatten it into a small, thin circle.

 

5. Preheat the Skillet

Heat a heavy skillet or cast-iron pan over medium-high heat until hot. No oil is needed.

 

6. Cook the Tortillas

Carefully peel the top sheet away, flip the tortilla onto your hand, and remove the bottom sheet. Lay the tortilla into the dry, hot skillet. Cook for 45–60 seconds, or until the edges begin to lift slightly and light golden spots form.

 

7. Flip & Puff

Flip the tortilla and cook the second side for another 45–60 seconds. Flip once more and cook for 15–20 seconds, pressing the center lightly with a clean towel to encourage the tortilla to puff.

 

8. Keep Warm

Remove the tortilla from the pan and immediately wrap it in a clean tea towel. This allows it to steam and stay soft while you finish cooking the remaining tortillas.
