German Chocolate Cake with Coconut Pecan Frosting

 

What You'll Need

 

Chocolate Cake Ingredients:

  • 2 cups granulated sugar
  • 1 3/4 cups all purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

 

Coconut Pecan Frosting Ingredients:

  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter (1 stick)
  • 3 large egg yolks
  • 3/4 cup evaporated milk
  • 1 tablespoon vanilla extract
  • 1 cup chopped pecans
  • 1 cup shredded sweetened coconut

 

Chocolate Buttercream Frosting Ingredients:

  • 1/2 cup butter
  • 2/3 cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • 1/3 cup evaporated milk
  • 1 teaspoon vanilla extract

 

How to Make It

 

1. Prep the Pans:

  • Heat oven to 375 degrees fahrenheit.
  • Grease two 8 or 9 inch round pans and line with coffee filters as parchment (see video for technique).

 

2. Make the Cake Batter:

  • In a large bowl mix sugar, flour, cocoa, baking powder, baking soda and salt.
  • In a separate bowl add eggs, buttermilk, oil and vanilla and mix well.
  • Combine the wet ingredients with the dry ingredients and mix to combine.
  • Stir in the boiling water; batter will be very thin.
  • Pour into prepared pans.

 

3. Bake:

  • Bake 25 to 35 minutes or until a toothpick comes out clean.
  • Cool completely.

 

4. Make the Coconut Pecan Frosting:

  • In a saucepan add brown sugar, granulated sugar, butter, egg yolks and evaporated milk.
  • Bring to a low boil over medium heat, stirring constantly until thickened.
  • Remove from heat and stir in vanilla, pecans and coconut.
  • Cool completely before frosting the cake.

 

5. Make the Chocolate Buttercream:

  • Melt butter.
  • Stir in cocoa powder.
  • Alternate adding powdered sugar and evaporated milk until smooth and spreadable.
  • Stir in vanilla.

 

6. Assemble the Cake:

  • Place the first cake layer upside down on a plate.
  • Spread a thin layer of chocolate frosting on the layer.
  • Add half of the coconut pecan frosting on top.
  • Place the second cake layer on top.
  • Frost the entire cake with chocolate buttercream.
