German Chocolate Cake with Coconut Pecan Frosting
What You'll Need
Chocolate Cake Ingredients:
- 2 cups granulated sugar
- 1 3/4 cups all purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
Coconut Pecan Frosting Ingredients:
- 1/2 cup light brown sugar
- 1/2 cup granulated sugar
- 1/2 cup butter (1 stick)
- 3 large egg yolks
- 3/4 cup evaporated milk
- 1 tablespoon vanilla extract
- 1 cup chopped pecans
- 1 cup shredded sweetened coconut
Chocolate Buttercream Frosting Ingredients:
- 1/2 cup butter
- 2/3 cup unsweetened cocoa powder
- 3 cups powdered sugar
- 1/3 cup evaporated milk
- 1 teaspoon vanilla extract
How to Make It
1. Prep the Pans:
- Heat oven to 375 degrees fahrenheit.
- Grease two 8 or 9 inch round pans and line with coffee filters as parchment (see video for technique).
2. Make the Cake Batter:
- In a large bowl mix sugar, flour, cocoa, baking powder, baking soda and salt.
- In a separate bowl add eggs, buttermilk, oil and vanilla and mix well.
- Combine the wet ingredients with the dry ingredients and mix to combine.
- Stir in the boiling water; batter will be very thin.
- Pour into prepared pans.
3. Bake:
- Bake 25 to 35 minutes or until a toothpick comes out clean.
- Cool completely.
4. Make the Coconut Pecan Frosting:
- In a saucepan add brown sugar, granulated sugar, butter, egg yolks and evaporated milk.
- Bring to a low boil over medium heat, stirring constantly until thickened.
- Remove from heat and stir in vanilla, pecans and coconut.
- Cool completely before frosting the cake.
5. Make the Chocolate Buttercream:
- Melt butter.
- Stir in cocoa powder.
- Alternate adding powdered sugar and evaporated milk until smooth and spreadable.
- Stir in vanilla.
6. Assemble the Cake:
- Place the first cake layer upside down on a plate.
- Spread a thin layer of chocolate frosting on the layer.
- Add half of the coconut pecan frosting on top.
- Place the second cake layer on top.
- Frost the entire cake with chocolate buttercream.
