Main Ingredients:
- 1 whole chicken, cut into pieces
- 6 cups Organic Extra Virgin Coconut Oil
- 6 tablespoons Pam's Prep All Purpose Seasoning, divided
- 3 cups Self-Rising Flour
- 1 cup Cornstarch
- 1 tablespoon Baking Powder
- 3/4 cup Mayonnaise
- 2 tablespoons Salt, divided
- 2 tablespoons Onion Powder, divided
- 2 tablespoons Garlic Powder, divided
How to Make It
Step-by-Step Instructions:
Wash & Prep the Chicken:
- Rinse the chicken thoroughly under cold water, changing the water often until it runs clear.
- Rub the juice of 2 lemons all over the chicken to ensure it is fully cleaned.
- Rinse once more, then pat the chicken dry with paper towels.
Season the Chicken:
- In a large mixing bowl, add the chicken, mayonnaise, and half of the Pam’s Prep Seasoning, salt, onion powder, and garlic powder.
- Mix well, ensuring the chicken is evenly coated.
Prepare the Breading:
- In another large mixing bowl, whisk together the flour, cornstarch, baking powder, and the remaining half of the seasonings.
Coat the Chicken:
- Dip each piece of chicken into the flour mixture, ensuring it’s fully coated.
- Shake off any excess flour and place the coated chicken pieces on a baking tray.
Fry the Chicken:
- Heat the coconut oil in a deep skillet or fryer to 350°F (175°C).
- Carefully place each piece of chicken into the hot oil one at a time.
- Fry until golden brown and crispy, ensuring the internal temperature reaches 165°F (75°C) when a thermometer is inserted into the thickest part.
Final Touch:
- Remove the fried chicken and place it on a wire rack set over a paper towel-lined tray to drain excess oil.
- Let it rest for a few minutes before serving.
