I Fried Catfish in Two Oils & Got SHOCKED by the Result!
What You'll Need
- 2–4 pounds catfish nuggets
- 1/2 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 2 tablespoons Pam's Prep All Purpose Seasoning
- 1/2 cup lemon juice (plus more for cleaning the fish)
- Cooking oil (coconut oil preferred)
How to Make It
1. Clean & Soak the Fish:
- Clean the catfish and remove any excess bits or particles.
- Rinse well in lemon juice and cool water.
- Soak the catfish in lemon juice and do not rinse after soaking.
2. Prep the Breading & Oil:
- Heat oil in a skillet to 350–375°F (175–190°C), with enough to come halfway up the skillet sides.
- In a bowl, combine cornmeal, flour, and Pam’s Prep All Purpose Seasoning.
3. Coat & Fry the Catfish:
- Take one piece of catfish at a time, shake off excess lemon juice, coat in the cornmeal mix, and gently place into the hot oil.
- Fry in batches in a single layer, do not overcrowd the skillet.
- Cook until golden brown and crispy on all sides, turning occasionally.
4. Drain & Rest:
- Transfer the cooked fish to a wire rack placed over a paper towel (underneath, not touching) to allow draining without becoming soggy.

Note: Do not overcook the fish. Be sure to place the paper towel under the wire rack to prevent sogginess on one side.
