High Protein Egg Salad Bagel Sandwich
What You'll Need
- 2 slices Hero Bagels, toasted
- 2 eggs, boiled
- 1/2 rib celery
- 2 tablespoons onion, chopped
- 1 large swiss chard leaf or romaine lettuce
- 2 slices turkey bacon, cooked crispy
- 2 tablespoons dill relish
- 1/2 cup Greek Oikos Pro Yogurt
- 2 teaspoons Pam’s Prep Seasoning of choice
- 1 tablespoon nutritional yeast
How to Make It
1. Make the Egg Salad:
- In a medium bowl, combine the Greek yogurt, celery, onion, dill relish, Pam’s Prep Seasoning, and nutritional yeast.
- Mix until well combined.
2. Add the Eggs:
- Chop the boiled eggs and add them to the yogurt mixture.
- Gently fold everything together until combined.
3. Build the Sandwich:
- Place the swiss chard or romaine lettuce onto the toasted bagel.
- Add the crispy turkey bacon.
- Spoon the egg salad mixture on top of the bacon.
- Top with the other half of the bagel.
