High Protein Egg Salad Bagel Sandwich

 

What You'll Need

 

  • 2 slices Hero Bagels, toasted
  • 2 eggs, boiled
  • 1/2 rib celery
  • 2 tablespoons onion, chopped
  • 1 large swiss chard leaf or romaine lettuce
  • 2 slices turkey bacon, cooked crispy
  • 2 tablespoons dill relish
  • 1/2 cup Greek Oikos Pro Yogurt
  • 2 teaspoons Pam’s Prep Seasoning of choice
  • 1 tablespoon nutritional yeast

 

How to Make It

 

1. Make the Egg Salad:

  • In a medium bowl, combine the Greek yogurt, celery, onion, dill relish, Pam’s Prep Seasoning, and nutritional yeast.
  • Mix until well combined.

 

2. Add the Eggs:

  • Chop the boiled eggs and add them to the yogurt mixture.
  • Gently fold everything together until combined.

 

3. Build the Sandwich:

  • Place the swiss chard or romaine lettuce onto the toasted bagel.
  • Add the crispy turkey bacon.
  • Spoon the egg salad mixture on top of the bacon.
  • Top with the other half of the bagel.
