Ingredients
- 1 1/2 cups all-purpose flour, plus extra for dusting
- 1/2 teaspoon kosher salt
- 1/2 teaspoon baking powder
- 2 tablespoons + 2 teaspoons olive oil
- 1/2 cup warm water
Instructions
1. Mix the Dry Ingredients
In a medium bowl, whisk together the all-purpose flour, kosher salt, and baking powder.
2. Form a Well
Make a deep well in the center of the flour mixture. Pour the olive oil and warm water directly into the center.
3. Bring the Dough Together
Gradually mix from the inside out, pulling flour from the sides into the liquid until a cohesive dough begins to form.
4. Knead the Dough
Turn the dough out onto a lightly floured work surface. Knead gently for 1–2 minutes until you have a smooth, soft dough ball.
5. Divide & Roll
Roll the dough into a log shape and cut it into 8 equal pieces. Roll each piece out paper-thin, so thin you can practically see through it. As you roll out the tortillas, stack them with sheets of parchment paper between each layer so they do not stick together before cooking.
6. Cook to Perfection
Heat a Chef’s Foundry ceramic skillet over medium-high heat with no oil or grease. Lay one tortilla into the hot skillet and cook for about 45 seconds. Once bubbles form on the surface and light brown spots appear underneath, flip it over. Cook the second side for about 15 seconds until lightly browned, then remove immediately.
7. Keep Them Soft
As each tortilla comes off the skillet, place it straight into a lidded container, such as a Tupperware, without parchment paper between them. Trapping the steam and moisture inside will keep the tortillas warm, ultra-soft, and perfectly pliable.
