15-Minute Healthy Dinner: Crispy Blackened Cod & Black Beans

Crispy Blackened Cod:

 

Black Bean Salsa:

  • 1 (15 oz) can black beans, drained and rinsed
  • 1 medium tomato, diced
  • 1/4 cup red or purple onion, chopped
  • 1/4 cup green onion, chopped
  • 1 clove garlic, minced
  • 1/2 cup frozen corn, thawed
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Pam's Prep Fiery Hot Seasoning

 

How to Make It

 

1. Prepare the Fish:

  • Preheat air fryer to 425 degrees fahrenheit.
  • Combine all fish seasonings in a small bowl.
  • Brush olive oil over the fish fillets.
  • Season fish generously on all sides with the spice mixture.


2. Cook the Fish:

  • Place fish in the air fryer basket.
  • Air fry for 8 minutes or until golden brown, crispy on the outside, and fully cooked.


3. Make the Black Bean Salsa:

  • While the fish is cooking, combine all salsa ingredients in a bowl.
  • Mix well and set aside.


4. Serve:

  • Remove fish from the air fryer.
  • Top with black bean salsa.
  • Serve over white rice or cauliflower rice if desired.
