15-Minute Healthy Dinner: Crispy Blackened Cod & Black Beans
What You'll Need
Crispy Blackened Cod:
- 1 tablespoon Pam's Prep Classic Seasoning
- 1 tablespoon Pam's Prep No Salt Seasoning
- 1 tablespoon Pam's Prep Fiery Hot Seasoning
- 1 teaspoon black pepper
- 2 tablespoons dried thyme
- 2 tablespoons dried oregano
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon olive oil
- 4 cod fillets or other firm white fish
Black Bean Salsa:
- 1 (15 oz) can black beans, drained and rinsed
- 1 medium tomato, diced
- 1/4 cup red or purple onion, chopped
- 1/4 cup green onion, chopped
- 1 clove garlic, minced
- 1/2 cup frozen corn, thawed
- 2 tablespoons fresh lemon juice
- 1 tablespoon Pam's Prep Fiery Hot Seasoning
How to Make It
1. Prepare the Fish:
- Preheat air fryer to 425 degrees fahrenheit.
- Combine all fish seasonings in a small bowl.
- Brush olive oil over the fish fillets.
- Season fish generously on all sides with the spice mixture.
2. Cook the Fish:
- Place fish in the air fryer basket.
- Air fry for 8 minutes or until golden brown, crispy on the outside, and fully cooked.
3. Make the Black Bean Salsa:
- While the fish is cooking, combine all salsa ingredients in a bowl.
- Mix well and set aside.
4. Serve:
- Remove fish from the air fryer.
- Top with black bean salsa.
- Serve over white rice or cauliflower rice if desired.
