Cranberry Glazed Christmas Wreath Meatloaf

 

What You'll Need

 

For the Meatloaf:

  • 1.5 pounds ground beef or protein of choice
  • 1/2 cup breadcrumbs, soaked in hot water
  • 1/4 cup chopped onion
  • 1/4 cup green bell pepper
  • 1/4 cup red bell pepper
  • 2 large eggs
  • 1/4 cup milk
  • 2 tablespoons Pam's Prep All Purpose Seasoning
  • 1 tablespoon Worcestershire sauce
  • 3 cloves garlic, minced
  • 1 teaspoon white pepper or black pepper
  • 2 tablespoons Wagyu beef tallow, divided

Cranberry Glaze:

  • 2 cups cranberry sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon tomato paste

 

How to Make It

 

1. Prep the Pan:

  • Preheat oven to 350 degrees fahrenheit.
  • Grease a bundt pan with 1 tablespoon beef tallow.

 

2. Make the Glaze:

  • Combine cranberry sauce, brown sugar, and tomato paste.
  • Blend on low until smooth but not runny.
  • Set aside.

 

3. Prepare the Meatloaf:

  • In a large bowl combine all meatloaf ingredients.
  • Mix by hand until just combined. Do not overmix.
  • Fill the prepared bundt pan evenly with the meat mixture.
  • Press down gently to compact.

 

4. Bake:

  • Cover and bake for 30 minutes.
  • Remove foil and carefully pour off excess oil.
  • Return to oven uncovered and bake an additional 30 minutes.

 

5. Glaze and Finish:

  • Remove from oven and let cool for 5 minutes.
  • Invert and remove meatloaf from the pan.
  • Spread glaze over the entire meatloaf, including the center.
  • Return to oven and broil for 2 to 3 minutes, watching closely, until glaze bubbles and sets.
