Cranberry Glazed Christmas Wreath Meatloaf
What You'll Need
For the Meatloaf:
- 1.5 pounds ground beef or protein of choice
- 1/2 cup breadcrumbs, soaked in hot water
- 1/4 cup chopped onion
- 1/4 cup green bell pepper
- 1/4 cup red bell pepper
- 2 large eggs
- 1/4 cup milk
- 2 tablespoons Pam's Prep All Purpose Seasoning
- 1 tablespoon Worcestershire sauce
- 3 cloves garlic, minced
- 1 teaspoon white pepper or black pepper
- 2 tablespoons Wagyu beef tallow, divided
Cranberry Glaze:
- 2 cups cranberry sauce
- 2 tablespoons brown sugar
- 1 tablespoon tomato paste
How to Make It
1. Prep the Pan:
- Preheat oven to 350 degrees fahrenheit.
- Grease a bundt pan with 1 tablespoon beef tallow.
2. Make the Glaze:
- Combine cranberry sauce, brown sugar, and tomato paste.
- Blend on low until smooth but not runny.
- Set aside.
3. Prepare the Meatloaf:
- In a large bowl combine all meatloaf ingredients.
- Mix by hand until just combined. Do not overmix.
- Fill the prepared bundt pan evenly with the meat mixture.
- Press down gently to compact.
4. Bake:
- Cover and bake for 30 minutes.
- Remove foil and carefully pour off excess oil.
- Return to oven uncovered and bake an additional 30 minutes.
5. Glaze and Finish:
- Remove from oven and let cool for 5 minutes.
- Invert and remove meatloaf from the pan.
- Spread glaze over the entire meatloaf, including the center.
- Return to oven and broil for 2 to 3 minutes, watching closely, until glaze bubbles and sets.
