Depression Cake! (Chocolate Cake NO Eggs, NO Butter, NO Milk, NO Dairy)

Cake Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar or sugar substitute
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 teaspoon baking soda

  • 1 teaspoon vanilla
  • 1 teaspoon white vinegar
  • ⅓ cup coconut oil, melted
  • 1 cup water

 

Frosting Ingredients:

  • 3 tablespoons coconut oil, softened
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon honey
  • 1 teaspoon vanilla
  • 1 cup powdered sugar
  • 2–3 tablespoons water

 

How to Make It

Step-by-Step Instructions:

 

Bake the Cake:

  • Preheat oven to 350°F (177°C).
  • Line an 8×8 baking dish with parchment paper and spray with oil.
  • In a large bowl, mix together flour, sugar, cocoa powder, salt, baking soda, and baking powder.
  • Add vanilla, vinegar, melted coconut oil, and water to the dry ingredients. Stir until fully combined.
  • Pour batter into prepared dish and bake for 30–35 minutes, or until a toothpick comes out with just a few crumbs.
  • Do not overbake. Let cake cool completely before frosting.

 

Make the Frosting:

  • In a large bowl, combine softened coconut oil, cocoa powder, honey, vanilla, and powdered sugar.
  • Mix on low with an electric mixer, adding water a little at a time until desired consistency is reached.
  • Spread evenly over cooled cake.
