How to Make It

Ā

1. Prep the Cauliflower Base:

  • Ensure your cauliflower rice is completely dry.
  • If using fresh or thawed frozen cauliflower rice, press it firmly between layers of paper towels to remove all excess moisture.
  • This step is the key to preventing mushy fried rice.

Ā

2. The High-Heat Sear:

  • Heat a large non-stick skillet or cast-iron pan over high heat.
  • Drizzle in the garlic olive oil.
  • Once the oil is hot and shimmering, spread the cauliflower rice into an even layer.
  • Allow it to sit undisturbed for 60 seconds to develop golden, slightly charred edges.
  • Toss and stir-fry for an additional 2 minutes.

Ā

3. SautƩ the Aromatics & Veggies:

  • Add the diced onion, grated carrots, ground ginger, ground fennel, Pam’s Prep No Salt Seasoning, and garlic powder.
  • SautĆ© until the onions are translucent and fragrant, about 2 minutes.
  • Add the green peas and stir to combine.

Ā

4. Build the Egg Fountain:

  • Create a well in the center of the rice and vegetable mixture.
  • Pour the beaten egg into the center.
  • Scramble the egg inside the well until soft, fluffy, and fully cooked.
  • Gently fold the eggs into the rest of the mixture.

Ā

5. Add the Glaze:

  • Drizzle the soy sauce, toasted sesame oil, and cayenne pepper evenly over the mixture.
  • Toss everything together for 1–2 minutes until well coated and heated through.
