5-Minute Turkey & Black Bean Loaded Skillet Stacks
Forget basic tacos! This fast, flavor-packed dish is the ultimate solution when you need a delicious weeknight dinner in minutes. Combining savory ground turkey, colorful bell peppers, and creamy black beans topped with melted cheese, this recipe gets elevated to gourmet status with a bright, fresh crown of multi-colored garden cherry tomatoes and fresh garden basil. Built on top of warm, freshly made tortillas, these loaded stacks deliver incredible texture, vibrant color, and bold flavor in every single bite.
Ingredients
- 1/2 lb ground turkey
- 1 (15 oz) can black beans, drained and rinsed
- 1/2 onion, diced
- 1/2 multi-colored bell pepper (red, yellow, or orange), diced
- 1 cup shredded cheese (Cheddar, Mozzarella, or cheese of your choice)
- Handful of multi-colored cherry tomatoes (red, orange, and yellow), quartered
- 6–8 fresh basil leaves, sliced or torn
- 4 warm homemade corn tortillas or store-bought tortillas
- Pam's Prep Classic Seasoning, to taste
- Ground cumin, to taste
- Pinch of salt, to taste
- Cooking oil, for sautéing
Instructions
1. Sauté the Veggies
Heat a splash of cooking oil in a skillet over medium-high heat. Add the diced bell pepper and onion and sauté for 2–3 minutes, until they begin to soften.
2. Brown & Season
Add the ground turkey to the skillet, breaking it apart as it cooks. Season generously with Pam's Prep Classic Seasoning, ground cumin, and a pinch of salt. Continue sautéing until the turkey is fully browned and cooked through.
3. Add & Smash the Beans
Stir in the drained and rinsed black beans. Using the back of a spoon or a spatula, gently smash about half of the beans directly in the skillet. Mix everything together so the smashed beans release their starch and create a rich, creamy texture throughout the turkey and pepper mixture. Allow everything to warm through for 1–2 minutes.
4. Assemble & Broil
Place the warm homemade corn tortillas on an oven-safe sheet pan or platter. Divide the hot skillet mixture evenly among all 4 tortillas. Top each generously with the shredded cheese. Place under a preheated high broiler for 45–60 seconds, just until the cheese is hot, bubbly, and melted.
5. Garnish & Serve
Remove from the broiler and immediately top with the fresh multi-colored garden cherry tomatoes and fresh-torn basil. Serve hot and ENJOY!
